Roasted Red Pepper sandwich

This is a sandwich I ate a few days in a row for lunch--really good.
One piece of Ezekiel bread
red pepper nut cheese (Rhio's recipe)
Kale
Red bell pepper
Put the nut cheese, kale and red bell pepper on the bread and broil (I do it in the toaster oven) until the pepper is as done as you want it.

The kale got crispy where it was not tucked under the pepper. I really liked it that way. On this day, I put some carrots beside it and called it lunch.
