Tofu (cheater's) Lo Mien

For dinner last night, I made a Tofu (cheater's) Lo Mien. It was really good. hubby and kids picked out the tofu and ate mostly the noodles, but still, it went over well. Here's the recipe:

Tofu (Cheater's) Lo Mien

1 package extra firm tofu
Olive Oil
2 small zucchini
1 small onion
1 yellow bell pepper
4 cloves of garlic (or less if you don't like it as much as I do)
2 stalks of celery
2 packages of Oriental flavor Ramen noodles (I don't know if the other flavors are vegan)

Drain and cube the tofu. Chop your veggies into bite size chunks. Heat the olive oil in a big fry pan then put the tofu and veggies in and saute them for just a couple of minutes.

Put water on to boil per the package directions for the noodles.

Sprinkle the flavoring packets onto your veggies and continue to saute.

Cook the noodles per package directions (sans the seasonings which are already on the veggies).

When the noodles are done, drain them and toss in with the veggies. Dish up and serve with chopsticks (to make it seem like authentic Lo Mien even though it's not).

That's all there was to it. And it was really good. Sorry the picture doesn't do it justice.

We are getting into full swing for the holiday season. The kids are doing a karate demonstration at the Festival of Trees on Saturday, daughter has a school Christmas program tomorrow night (she can't decide if she would rather do that or go to girl scouts--I don't mind if she skips it because I'm kind of mad at the music teacher. She isn't doing anything with the kids in my son's grade! They go to the same school and have the same music teacher, but she is leaving one grade out of the Christmas program!), we are going to go see Handel's Messiah, piano recital is coming up, violin recital is coming up, work parties are coming up, etc.

It just feels like we spend this whole month running around!

Oh well, I'm going to get back to work now.
